Hi! My sister is getting married in 2 weeks and I was asked to make Eclairs, Cream Puffs, Creme Horns and 2 different kinds of cookies. These will ALL be bite-sized. How much do I make??? There will be a cake, other cookies (I think 5 other kinds) appetizers (cheese tray and fruit tray plus hot Hors d'oeuveres)And a main meal. I really think she has too much as it is, but, it's her wedding. Any help would be greatly appreciated. Thank you.

Let her buy it, you'll just be criticized and then you'll be mad and her husband will hate you.....NO, this is not the way you want to start things out..................

HaHaHaHaHa.......
Don't listen to Manny, weddings are great !
I love weddings ! I've had several.
Normally 3-5 pieces per person, but I think your right, there is already a lot of food.
You could drop it down to 3 pieces per person, and be safe.
Better to run out than have a lot left.
Goodluck.

I charge $4 pp and give 2 pp, then let them decide how many they want, petites fours fly off the platters while the other desserts languish.

3-5 pieces????...of pastry maybe....8-12 on real food, per hour!!!!!!
People are pigs man, specially when the food is free, you know that!
Actually it depends on the time of day also, if it's during a meal time, people will consume more, if it's after meal times, they will consume more, but slower!

Thank you! I went with 3 pp and am pleased to say that there was nothing left except for better than 3/4 of her cake. It sucked...even my kids wouldn't eat it. No, I didn't make it. And, Chefmanny, her husband loves me, she doesn't resent me nor did she criticize me and I have never seen people eat the way her guests did! You said it.......People are pigs! Thanks again!
