Don't forget the brandy, Everyone forgets the brandy. 2lbs Ricotta cheese drained well, actualy basket cheese works better, confectionery sugar to taste I usually use 1/2 cup. 2 tbl of vanilla, mini choc. chips and 1/4 cup brany. Mix very well in blender till very smooth. Ciao
