Professional baking books don't read like amateur books, in that they don't print the obvious.
The cookie you mention is called an ice box type cookie in that it requires no baking, stick the layers together with brushed on egg white, let set then slice and dip in choc. You can use marzipan if you like , from your description its obvious you have a good idea how its put together. The time life CANDY book shows some variations. I make something similar to this and brush chcolate on the outside just before slicing, the brush imparts a barklike effect, you have to cut fast though. I saw these cookies often in England but suspect they are a type of petite fours sec.
It wouldn't appeal to most bakers becauze its triple the labor for the same output , a lot of fiddling coloring and gluing layers together etc. Compare to an oatmeal raisin...why bother.?

A fun home project but I dunno any commercial bakers (in their
right minds) who would make these types of products.
