RAINBOW PASTRIES
PG 416-417 PROFESSIONAL PASTRY CHEF

YEILD: 40 PASTRIES

1 3/4 lb Marzipan Filling
1 1/2 lb Vanilla Buttercream
2 oz Strawberry Jam or Preserves
1 tsp Beet Juice
2 oz Lemon Cream or Lemon Curd
2 oz Melted Dark Chocolate

Chocolate Glaze

METHOD:

1...Spread the Marzipan out on an 8x12 pan lined with baking paper. Bake at 400 for about 15 minutes, allow to cool completley. Remove cake from pan and remove baking paper.

2...Cut cake lengthwise into 4 two inch strips.

3...Divide the Buttercream into three equal portions. Flavor one with the Strawberry Jam and the Beet Juice. Flavor another with the Lemon and the last one with the melted chocolate.

4...Using a #8 plain tip, pipe a rope of each color buttercream onto each of the four Marzipan strips, each rope of buttercream should run the length of the strips with two colors on the bottom and the third on top and centered of the of the other two.

5...Now the strips should be refrigerated until firm.

6...Place the stips on a grate over a drip pan and coat them with the warm chocolate glaze (if the glaze is above body temp it is too warm).

7...After the strips have been coated they need to be chilled a bit to help set the glaze.

8...Remove strips from the fridge and trimp the ends. Cut with a warm wet knife dipped and clean between cuts at a 45 degree angle. The warm knife can make the buttercream colors blend but do not worry, just take the edge of the knife and run it from bottom to top of the ones necessary.

This may not be exactly what you are looking for but it will definatley fill the bill for a severe sweet tooth.
