Here you go Tommy, these are great recipes, hope they will do.
Remember, you can always spruce it up with grated lemon, orange, vanilla etc. Culinary overkill.

Pancakes, Buttermilk

Amount Measure Ingredient -- Preparation Method

4 cups Pastry or A/P Flour -- sifted
4 each Eggs
1 quart Buttermilk
2 teaspoons Salt
1/2 cup Sugar
4 teaspoons Baking Powder
2 teaspoons Baking Soda
1/2 cup Melted Butter

Combine eggs, buttermilk and salt, whisk smooth.
Sift flour with baking powder and soda. Combine with salt and sugar.
Stirr together with liquid and melted butter. Don't overmix.
Will make 32 x 2 ounce pancakes.
Fill a 3 ounce ladle full of batter. Pour onto a 350F hot, oiled griddle.
Since one ounce of the batter clings to the ladle, this will make 2 ounce pancakes. Wait until the edges start to firm. Flip over and finish griddeling.
If you have a batter dispenser, use that with the correct setting.
Serve hot with butter and syrup. Can also be filled with sauteed apples, blueberries, raspberries, etc. Some of the regular flour can be substituted for Kasha or buckwheat or whole wheat.

1/2 cup Brown Sugar
4 teaspoons Baking Soda

3 1/2 cups Orange Juice, Fresh
1/2 cup melted butter

Combine eggs, orange juice and salt, whisk smooth.
Sift flour with baking soda. Combine with salt and sugar.
Stirr together with liquid and melted butter. Don't overmix.
Will make 30 x 2 ounce pancakes.
