Hey Den,

I would approach it from another direction, ask them how many cookies they want to buy.
Sell by the piece, you are making them by the piece by hand right?
Figure out what they cost and multiply by 5(at least) to cover food and tray/doily cost.
I would make them commit to a number of cookies, then they can't come back and complain you didn't give them enough.
Old lady's eat 1/2 a cookie, young kids eat 5 each, let the customer decide what they need or you'll spend more time catering then selling.
