Abby, you can also use raspberrry buttercream (buttercream with raspberry jam,no seeds, and kirsch to flavor) with the addition of fresh raspberries, or just using raspberry jam, a classical filling in cakes. Good luck. Heather : : I am making a wedding cak for a friend. They requested rasberry filling. I can't find a recipe for it. I don't want to use ready made, can anyone help.

: I've used rasp mousse with gelatin to firm it up in wedding cakes. As usual do a test run first to check how much gelatin you need. Dissolve it in rasp liquer, warm it up, let it cool and pour into the cream as its whipping, fold very quickly into the base. A drop of coloring will mask the tendency of the rasps to turn grey.

: Cheers, Gerard.
