I've seen a recipe for a tarte Tatin that uses a few quinces
sliced and poached in vanilla syrup along with the apples, but
I've not tried it myself. Also, Bo Friberg in _Professional
Pastry Chef_, 3rd ed. gives a recipe for a quince custard tart (p. 248).
