The pastry chef I've been working under recently took a job at the top hotel restaurant in town as assistant to the pastry chef. When I asked her what she "baked" during her first weekend, she thought a moment and then replied "nothing." She spent most of her time preparing the garnishes, sauces, etc. for plating the desserts, displaying them for Sunday brunch, etc. She said she loves doing that. However, she also knows how to bake anything (and has offered to teach me) which, I think for me, sets the difference between a baker and a pastry chef.
