: I'm not sure you'll get a ganache, if you melt 2 parts white choc into 1 part boiled heavy cream what you end up with in the pan is heavy cream,cocoa butter,sugar and milk powder.
: Theres just no cocoa mass in white choc to bind it together so it tends to be slop.
: It should work if you add a blob of butter, that should add enough fat to keep it emulsified.
