A red velvet cake recipe is in either the Better Homes and Gardens
basic red and white checked cookbook or any southern recipe book.
It is a cake made with sifted cake flour, shortening, vinegar, water,
very little cocoa and a lot of red food coloring - not much in the
flavor department but it came about, I think, during the depression -
when baking needed to be conservative. You can make it with either a
cream cheese frosting or your basic buttercream frosting.
