Crumb Topping with Powered Sugar Sprinkled on Topping

What is the secret commercial bakers use to
keep the powered sugar they sprinkle on the crumb topping of a coffee cake to keep it from disappearing?.

I recently made a cinnemon apple coffee cake which was delicious, but when I sprinkled powered sugar on it, the white appearence of the sugar was gone after two ore three hours.

Is there a secret ingrdient they use to keep it looking snowcapped for a week or more?
