Never did rolled fondant, couldn't bring myself to doing it when poured looks so much better.
I made a bucket of rolled white fondant by following the general formula for dark plastic chocolate, melt, add corn syrup , let set and knead with water if needed, found it didn't need water but XXXX sugar to get it dry enough to handle.
I basically did it by feel after that, I still have some left in the cooler.
6 oz white choc(melted) and 4 teaspoons corn syrup.
Knead and let rest a few hrs.
Makes nice roses if you get the texture right.
