Bubble sugar is made from a regular cooked sugar recipe and then you pour a little bit on durroid paper, pick the sheet up and let the sugar run down. The paper will create a bubble affect. Durroid paper is similar to parchment but much more expensive. It can cost up to about 35 cents per sheet. You can creats a similar effect using isomalt. Just sprinkle a generous amount on a silpat with some powdered food colouring and cover with another silpat and bake. My general sugar recipe is 2Kg Sugar, 500ml water, 400g glucose, tartaric acid(amount varies as to your environment).
