I have had success with a napoleon consisting of alternating layers of phyllo, dried pineapple rings,cinnamon poached peaches topped with white pepper ice cream. Ice cream may not work if your entry has to stand for any period of time...try a coconut pastry cream incorporated in the layers if this is the case. Good luck!
