You can make your own. By weight, a general formula is 2 parts all-purpose to 1 part cake flour. It shoud end up with a protien content of a little more than 9 grams a cup. Commercial pastry flour has around 9.2.

By volume it can be done 4 cups all purpose to 2 1/4 cups cake flour.
