Amount Measure Ingredient -- Preparation Method

FILBERT SPONGE 2x10"

8 oz Eggyolks
20 oz Egg White
12 oz Granulated Sugar
1 tsp Cinnamon, Ground
7 oz Filbert Flour -- Ground very fine
6 oz Butter -- Lightly browned
12 oz Soft as Silk -- Triple sifted

HAZELNUT FILLING

2 lb Heavy Whipping Cream
4 oz Sugar
4 oz Gianduja -- Melted
4 oz Pastry Cream -- See Batch Recipe
2 oz Hazelnut Paste -- Doehler

Melt and lightly brown butter.
Beat one half of the sugar with the yolks, ribbon stage.
Beat remaining sugar with the whites into firm but not dry peaks. Combine with yolk mixture.
Combine Flour, Filbert and cinnamon and fold into the above yolk-white mixture.
Lastly fold in browned butter at roomtemperature.
Bake as indicated for Genoise.

For filling and icing, combine melted chocolate with lightly warm pastry cream and hazelnut flavor.
Whip cream with sugar and fold into above.
The Gianduja can also be combined with the whipping cream during the last stages of whipping.
Decorate as desired, Chocolate and toasted, chocolate covered hazelnuts
