: I have been doing about 15 10" carrot cake rounds per week as well as about 15 sheets. I wind up with a lot of trimming.

: Does anyone have an idea how to use the scraps?

If the scraps are chunks of carrot cake you might make "Carrot Cake Swirl Cheesecake." Prepare the Graham Cracker Crust, make the N.Y. style cheesecake batter and fold in the carrot cake chunks. Bake it as regular cheesecake, you might finish it with sour cream topping that would also hide the carrot cake chunks on top. The flavors are basically the same as the carrot cake filled and frosted with cream cheese frosting has.
