If it contains zero butter its not buttercream, sounds like this guy is putting the K in quality.
I'd like you to ask him what sense does it make to spend money on labor then omit the prime ingredient, thats a fools economy , same as making puff dough with shortening.
With all the jobs available I wouldn't waste my time working with him.
