What about vietnamese cuisine, it has post french colonialism influence in many of its non traditional dishes.
Asian desserts aren't too prevalent , lots of fruit, bean paste ice cream etc but not developed like France...or the west.
I had the feeling fusion trends had run their course already or are you looking for new avenues to explore.?
My wife is Chinese but most the desserts she cooks up are western influenced, she does an interesting spongey muffin that is baked in a steam bath with a cover, it could be an interesting base to build on. Its probably something from Japanese influence.
