:Decor sponge is the name I use . you take a pate decor[tuille paste] cocao or colored, recipe[4oz butter,4ozgrsugar,4oz eggwhites,4ozapflour]. put design stencil down on a silpat[silicon over fiberglass mess] the size of sheet pan, their nonstick and heat proof.spread pate decor over stencil remove to reveal pattern place in freezer make biscuit batter spread over cold pattern in thin layer bake till done.cool sprinkle top with powder sugar invert peel off silpat to reveal decorator sponge.use to line ring molds fill with mousse or line terrine molds.JB prince company sells different patterns and combs to spread stenciled decor paste. I think it was developed by the french,became popular two three years ago.
