A 30 LB can of frozen apples?
Thats a big can. For 30 lbs apple (froze or fresh) use 4 oz corn starch or modified wheat starch
3 pints apple juice + 1/2 cup lemon juice.
Dissolve starch in 1 pint apple juice and boil the rest of the liquid, whip the base into it and boil the lot to thicken.
Add cinnamon if you must.
If apples are sweetened add no sugar, add 2 lbs if they are not sweetened.(to the apple juice before boiling).
