Costs me about $3.00 to make 12 doz mini banana muffins, retails for $4.00 per dozen = $48.00. I'm not concerned about that.

As for oleo vs. butter, in my situation we have a little issue called the "time value of money". I need butter for sauces, etc. for dinner, also to serve with bread. I use about 12# of butter per week, total. If I stock both butter and margarine, my usage of butter decreases, yes, but my inventory increases. Plus, in my situation I have the potential for waste. Say I cut my butter usage in half. Now I use a case every six weeks. Do I get some spoilage? Does it pick up unpleasant flavors in the refrigerator as dairy products do? Plus I have money tied up in inventory that could be earning interest elsewhere -- a small amount yes, but a little here and a little there... Also, I have only two very small reach in refrigerators, so where do I store a total of 72# of margarine and butter. I have to decide if my money is more valuable to me saving a few pennies a day or earning a few pennies a day in interest.
