Good idea, thats the way to go if you can't get fondant easily.
It depends mostly who they are for and which type you're making.
As I said before petite fours is a catch all name for many varieties.
I worked for a while at Le Petite Fours bakery in Rhode Island and we probably did 20 varieties every day.
BTW, NONE were of the little spongecake type, or layered cake type, I think what you might be looking for is petite fours sec.
(dry). Miniature pastry is a MUCH better way to go then the little glazed cakes.
Mini strawb tarts, mini eclairs , baba, and napoleons look better and taste better....and yes they are all petite fours.!
