I'll agree with what Gerard has said, including buying fondant. You can order it from Albert Uster Imports or possibly from a local food supplier. I made literally thousands of petits fours this past Christmas season for a wholesale customer. I used chocolate ganache and white chocolate ganache over sponge cake for all of them because that's what they wanted, but I can't say it's what I would choose.

I have a great old book (1960's?) I found at a used book store -- "New International Confectionary" -- I think, I'll double check the name later. It has probably three or four hundred types of petits fours listed, both sec and glace, plus pictures. Also, all of the recipes pull from base recipes, so you can make a few products and then make a wide variety of petits fours from that.
