: My customers keep asking me to re-create a charlotte rousse they remember from their childhood in New York City. They remember a paper cup that held lady fingers and cream which was squeezed to eat. Do you know any recipes for this? (I would put anything, but is there a particular flavor associated with this?) Do you know where to buy the small paper cups-they have been described to me as upside down chefs hats.

It was a Charlotte Russe--but as I recall it was simply ladyfingers, whipped cream stabilized, and a glaceed cherry served in a pleated paper cup. It was not at all sophisticated, and probably had an artificial vanilla taste.
