I went down and read your posts to hans regarding the use of thermometers.
Remind me not to get you angry. :-) I have to be honest, while I
don't use a the clock to bake, I need the thermometer to get the ovens
close to the desired temp. I am baking cookies in a nine door deck
oven designed for about 250 loaves of bread per oven. I'm looking to get the temp in
the ball park. If I don't my bisscotti would toast before the center is baked through.
However, I have to bake by feel. As these ovens are very tempermental,
I have to bake by sight and touch.

When I mixing bread dough, the thremometer is not far a way. I don't use it all the time,
but during the change of seasons its important that I keep track
of the ingredieant temps. I got nailed a couple of weeks ago. Our Sourdogh likes to
be cool, and the bakery was a little warm, the ingredianets were
a little warm, the mix was a little larger than normal. It all
added up to heat the dough up to a point that it created a dough that
was past the max dough temp for that type of dough. You know I felt it
it felt great and I thought, "geez that's a little warm", my stupid brain
overrode my reliable baker's instincts. I should have put it in the walkin
for a couple of hours, but I didnit. If I just had stuck the
thermometer in, I would have, but I have been mixing all winter
without ice and hell it was still winter. To make a long story
short, that dough took off like a rocket sled
on greased rails. The oven crew didn't help as they could have bakein a little earlier.
Oh well.
I dunno, Gerard I use a thermometer an awful lot.
Do you really not use one?
