I made them once yrs ago, heres what we did, the shell was odd in that it contained wine and pistaccios besides the usual ingredients.
Fried and wrapped around a greased broomstick til cool.
The filling is made from a blanc pastry cream, no yolks, just whites sugar and corn stach (or flour) and milk.
When cooled its beaten smooth and folded with riccota. Add shaved chcolate.

Far and away superior to anything I ever tried from any bakery, usually they just whip cream and fold with riccota, add choc chips, totally bogus.
I suppose you need specific recipes right? duh..
Let me look something up , maybe the intl confectioner has it.
Does this sound familiar or are you trying to capture the cardboiard flavored ones most bakeries sell,?, the ones we did were real italiano.
