As one the leading french pastry shops in Australia to date ,
I find growth within the industry so vast that the temptation to
make money vs the passion to create past and present pastry triumphs and train staff like wise.
Almost allways given over too the greed to the allmighty dollar.
Therefor mass production is why skills and recipies are being thinned out and the art of discovery by manipulation of ingredients is allmost lost.
Education within the trade being fixed to a set curiculem
will almost certanly in my opinion create packet mixed pastry chefs.
How ever evidently there are still some chefs and pastry lovers alike who are using technology by comunication to re-birth
the hand made and delicious colenary pastry's that i have come to love.
