Fondant icing by it's very nature will protect the cake from drying out.... It can be prepared several days in advance and kept in a cool area of your facility.... A cooler is not necessary.... Nor is freezing which may cause the fondant to crack... (hard freeze)
I would make a plastic tent to cover the cake from dust, flies and drafts... How far in advance do you need to prepare it?
