: Does anyone have guidelines on determining the quantity of food to serve for large groups? A local charity has asked us to provide finger food for an open house at their new facility. They expect 100 to 150 people from 5 to 7pm. Thanks a bunch for any info!

Hey Di
There are a whole lot of factors that go into deciding
how much food per you need, first the 5 -7 hour
is feed me time, are you doing this for advertizement
or are they paying you?? 2. is there a bar??
3. how much space is there to feed them, is the food
going to be easy to get at or are you in a crowd
situation where access to the food will be limited?
any way for that size group a genteral rule of thumb
is 10 to 15 pieces per. Oh are they going to be passed
or self serve?? this makes a difference, because
you can control a passing type situation. Hope
I was of some help with the limited info.
Good Luck Chef David
