: :thanks ill give it a try as for preparation the steaks are pre-cut and individually frozen all i do is get them out of the freezer and put in a contaner and let them defrost overnight in the fridge then season them and lightly dust with flour just before panfrying(teflon and other non stick type pans haven't found thier way to my kitchen yet hence the dusting of flour)

: : All of the shark I have used is meaty tasting or almost sweet never bitter.

: Nice answer Timothy, I am sure that will help him..
: (just kidding)

: In my experience, bitterness in fish can be helped by soaking the thawed and well drained fish in whole milk over night. This is also helpful with strong flavors in chicken or fishy-ness in fish.

: Please give this a try and let us know if it helps!!

: If not, maybe you should share with us how you are handling and preparing the fish. Perhaps we can see an error there.

: Best of luck my Russian friend!
