Thank you for the nice words... Hmmmm bidding...well, I prefer it when they give me a budget and a description of the event, who is attending, purpose etc... then I put together a great meal and service description that fits in their price range... and I give them upgrade options....
Make sure your presentation stands out... also, hand deliver it within an hour whenever possible... take along some cookies.. anything that says, "this caterer is different...." whenever things are close to equal, the added touches will get you the job.... a brief note explaining why you want to cater their party and a small bit about yourself works well too....
