Preheated & preheated insert pans?
By this you are referring to hotel pans preheated prior to filling? Keeping hotel pans, filled with said food, in oven until transport time is essetially the same?

I really love the idea of make-shift kitchen; time is a problem! I'm pretty much head cook, head set up, head manager both front and back, so while I should be setting up make shift kitchen one hour there, one hour back who is prepping and preparing at commissary? Staff is very simple-minded (do not mean to sound condiscending, they just do not have the knowledge and are learning as we go).

Problem mainly is the hall restrictions. Same day setup (i.e. not before noon)and execution (dinner served at 7) and clean up does not lend well to being far away.

Your suggestions sound fun. I'll begin playing with them. Any other ideas, thoughts and suggestions would be great!
