Did you post the question about yachts at the APCA forum? There's one there. Personal chefs charge either by the entree or a flat fee, and there seems to be an even split between food-inclusive and cost of groceries+fee (at least, with the ACPA members).

Also, as a personal chef you must cook at the client's house or from an approved kitchen (not at home). Therefore the advice to stock your freezer with frozen or pre-cooked doesn't hold up as that would be illegal.

Your question really belongs in the "cooking for you" forum, not catering. They're two different beasts.
