Another area that I did not mention was the additional rental items. When I tend to do a lower cost job I have lower rental contribution dollars. For a BBQ this tends to run at $0.65 per guest. On an uperscale menu we tend to run about $4.50 to $5.00 per peson in rental cost. So when I include rentals my profit dollars do go up on a higher food cost job.
