Sam is right 12 peices per person. You may need to increace that number depending on what your serving and if your clients will be hosting heavy eaters.

I have heard Sam say it is the responsibility of the Caterer to make sure there is enough food. That may or may not be the case but if the food runs out nobody thinks the host didn't order enough food they always think it's the caterers fault.
