I have recently been introduced to a product
called "Fluid Flex". It is an emulsified
shortening that makes the fluffiest FAT-FREE
cakes. It also cuts down on butter cost ($2.00/lb).
It is manufactured by a company (I think) called
Van de Bergh. The recipe that my instructor gave
me follows - it yields one 1/2 sheet pan or
1-12in round layer. Do your own math.

6 ozs. cake flour
1 oz. cocoa
3/4 tsp. salt
1 1/4 tsp baking powder
3/4 tsp. baking soda
8 ozs. sugar
1/2 tsp vanilla
3 1/2 oz Fluid Flex
7 ozs. milk
4 ozs. eggs

1) Mix dry ingredients together
2) Add liquids to dry mixing until incorporated
3) Pour into a greased and floured 1/2 sheet pan and bake about 20 minutes or until a toothpick comes out clean when inserted.

It is the best chocolate cake.
