Ok - here is how I handled it. I first called the caterer who recommended me and asked her how she would have billed out the job. She told me she would have charged him per person. She also agreed that I was VERY reasonable. I called the Decorator's secretary and explained as nicely as I could that contrary to what he had said EVERONE works this way and, while I was so pleased that he had called me, I could not really revamp my entire business structure for one client. I would however be happy to show him what the price included, per menu item, per person. I came up with $45 per person, deducted a 10% "volume discount" (85 people)which brought it down to $40 pp. I faxed it off. I will now let go. We'll see.

As far as rentals, if I get an estimate from the Tent company, I just tell the client there is an additional 15%? I did tell the decorator that the band was $700, and they are kicking me back $100 as a booking fee. If we get the job...
