Hi Cathy, I noticed that no one had replyed yet to your request for an updated Hawaiian menu and I have some ideas. Appetizers Tropical Fruit platter with some sort of dipping sauce (coconut maybe) A vegetable sautee with a sweet and sour flavor would be tasty and economical. You should probably do a rice, not sure on this one, maybe a simple leek pilaf would do, most people will put the veggies over the rice. Teriyaki Beef Tenderloin and Grilled Chicken breast (again, you may be able to add just enough sauce to each of these to keep them tender for cooking ahead of time, I always like to add pineapple to my teriyaki chicken, the juice would keep it tender as well) Just a few ideas!
