actually the response that "sorry, my insurance company does not allow me to release leftovers" works in most situations...

but at times when i am at a guests house where i prepare for 100 people, 100 showed up and ate very well, but i have left overs because i was really prepared in case 120 showed up, then i tell them that i had fulfilled my contract to feed 100 ppl, if they want the leftovers they will pay me for the 120.......
( naturally, i do leave the host about 4 portions in their refrigerator as a courtesy, at no charge)
but i will happily charge for any extras....

caterers simply must not be allowed to be beaten up by their clients.....
