Gerard, don't you know that Cajun's are notorious for eating anything? Paul Prudomme's "latest" is nutria, which is nothing more than a big swamp rat!! We even lovingly call our crawfish "mudbugs". No, my problem is I am afraid 1. That a lot of the recipes I have are either too heavy for such hot weather, or not suitable for a buffet, or, 2. I hate to say they are boring, but unless there's enough tabasco to make your mouth at least say "Hello", these people are going to find the food under-seasoned. I need ideas that work for hot-weather buffets and could handle a little cayenne without totally losing their integrity. Think "Scotch-Irish noveau cuisine for Cajuns". Shari
