: : has anyone cooked in a overnite camp?I'll be cooking this summer in a camp for 350 people . Ive cooked in the past 4 years in a camp for 200 children. this job I'll be taking will be alot more pressure and a bigger menu. I would greatly appreciate some great tips and experience from someone who cooks in large quantities.I especially would need a pizza dough recipe to feed 350 .That would be around 30 trays. I also seem to have a problem with meatballs in a large pot they just all stick together, am I putting too much in the pot?ther are some other questions I have and I would greatly appreciate some help. This is a great website which I have been enjoying so much.

: Message from Carl :

: Do you have to make pizza dough? I know it is better, but when you multiply it so much, you just cannot physically
: handle that much dough without heavy duty equipment. I would buy
: a great quality frozen pizza from "Sysco"

: As far as meatballs, why would you cook them in a large pot???
: Cook them on sheet pans in the ovens, they will hold well in Cambros (insulated holding cabinents)
: Cook your sauce in a Pot, but pour sauce over meatballs.

: So, where are your other questions? When you ask, make sure you give us
: the conditions of the kitchen, what kind of equipment, refrigeration is there.

: Good luck

: Carl
thank you carl for the meatballs in the oven that was a great idea. Im not familiar with what is a cambros can I just put them in the oven with covering them ? as far as the kitchen it is a very well euipped kitchen with a 60gallon mixer and 2 big refrigeration. As for the pizza the camp does not want to purchase the dough I will have to make it by mixer. Ineed to also make potatoe knishes do you have a good recipe for that . how many pounds of popatoe do you think I would need to fill 7oo knishes? how many pounds of elbow macaroni would you serve for 350? and also spaghetti ?and how many pounds of potatoes for potatoe salad? I could figure it out if I have to I'm just looking to ask someone who has more experience

thank you if I think of anything else Ill let you know
