if you or anyone here (and we see this question ALL the time) think that we could possibly give you the answer in an email to that question, you need to rethink....
there are too many factors to possibly list, such as staffing, contracts, sales techniques, marketing strategies, equipment needs, style, food safety and sanitation (the
most important), food holding and freshness, preparation techniques for maximum holding (who likes dry chicken?), timing, product availability, latest trends, table
garnishing (see Francis T. Lynch's book), food presentation, cost accounting, receivables, collections, deposits, payments,... i hope you get my point.....

please dont mistake my frankness for arrogance or aloofness, i am simply tired of seeing people losing their savings by getting into businesses they know little
about....

my recommendation is for you to get a job with a great caterer in another city (for ethical reasons) and learn as much as you can...then move to another city and
go at it.... you will be much more successful in the long run.... this is not a short run business, this is not an easy business

i will happily help in any way i can, but these kind of questions are getting a bit old.... please understand...
