I'm new to this and need a nickel's worth of free advicePosted by MJ on January 01, 1999 at 19:31:22: Hi y'all, I NEED to work from my home ( one of my 3 kids is special needs and is not in mainstream school). My spouse is currently in his 2nd year of culinary school. Our initial goal was to own our own B&B, but that idea is changing. We happened on the notion of starting a PC or HMR after reading several articles. What is ABSOLUTELY the best way to get off the ground? How about trial and error? BTW, we are both excellent cooks and have alot of experience. Is this enough, or should I have formal training as well? Also, we wish to remain independent of organizations, except those which his instructors might recommend for him as a chef. Thanks in advance for your input. MJ
