I live in a city but often travel 35 min to cook for a client. I often communicate with clients and potential clients via email which saves time for both of us. I have done one client interview by phone and met her the first time when I arrived to cook. Once you're there and set up you stay put for the cooking durationm, so travel is not so much a factor. JMO
