I choose the menu for my clients. I have them fill out a very detailed food questionnaire at the beginning of their service. I then create each menu using their choices. Of course, each menu is presented for preapproval by e-mail. I rarely have clients want changes unless they forgot to mention a dislike of some item. This gives me the freedom to take advantage of seasonal sales on produce or seafood, rather than have someone request an out of season and expensive or lower quality off season item.
