being sertified in sanitation is very important, I think. It sure gives them reasurance. I wrote up a paper on (brief) food safety that I give my clients and I provide them with an instant read thermometer. tell them what temperatures the food should be reheated to, etc. Once again there is alot of free info available on food safety, web, library, me, etc.
