They have been concerned about food safety, my restaurant experience, whether they can trust me or not, etc. it is our job to convince them we are qualified, that we are trustworthy, that we take sanitation seriously (certified does help), We can offer quality,consistency, originality, and we know what we are doing.

It has been my experience that people will believe you are what you say you are because it relieves them of the responsibility of having to know what you know.

Certification standards for personal chefs aren't significant because they aren't regulated by anyone other than the USPCA. My understanding is that at the end of the training, the personal chef is just awarded a certificate. It's not like getting a certificate from the ACF or anything.
