: I am currently using the Country Cookin' pressed paperboard packaging from MMM Distribution. It works well for us but still leaves much to be desired. I have contacts in the food packaging industry and am thinking about having some custom packaging made for me. It would be airtight, freezer to microwave to oven, and allow for excellent presentation. Please give me feedback regarding any interest other PC's would have in purchasing quality packaging designed by personal chefs for personal chefs.

There is already a freezer to microwave or conventional oven container - it is called IVEX - it's what you see prepackaged entrees in at your local grocery or deli (black plastic with a clear domed lid). The only drawback is the lid - too much air can lead to freezer burn. We have been using the containers, without the lids, and sealing them with a vacuum sealer. The client has only to slit the vacuum seal material in order to microwave. The IVEX containers are usable in a conventional oven up to 400 degrees.
By the way, you can also get a copy of the USA Today article from the open forum page on www.personalchef.com as we announced on Sept. 25. Happy cooking!
